1/2 cup whole milk
1/3 cup crème fraîche
5 oz Gruyere cheese, grated
1.5 tbsp Grey Poupon Dijon mustard
salt & pepper

Melt the butter in a small saucepot, and then whisk in the flour. Cook over medium heat until it boils, and continue to cook for a couple of minutes. Add the milk and season to taste with salt and black pepper. Cook until the mixture has thickened, and then remove from the heat. Pour the mixture into a mixing bowl and stir in the crème fraîche, followed by the Gruyere cheese and Grey Poupon mustard. Reserve at room temperature until ready to use.
Savory Puff Pastry Tart
Ingredients:
1 ea puff pastry sheet, large
1 bunch asparagus, blanched
3 slices ham, large diced
Dijon-Gruyere cheese filling
chives, sliced thin
Method:
Preheat your oven to 400 F. Cut large squares of puff pastry, and then cut a slightly smaller square from the center of each. With a rolling pin, roll out the center square to match the size of the original shape. Place the puff pastry ring on top of the rolled-out piece to form a tart with raised edges. Bake the empty tarts for 10 minutes, and then brush the inside with a thin layer of Grey Poupon mustard. Fill with the cheese filling, diced ham, and asparagus. Bake for another 25 minutes until golden brown. Sprinkle with chives and serve warm.
